Wholemade coconut granola

Let's face it, some mornings time is an elusive commodity.  This recipe for coconut granola is to have on hand for those days.  Pair with creamy yogurt or fresh raw milk, or for a treat that {almost} makes the clock stop, try on top of ice cream!




Coconut Granola
Serves 10 

3 c large flaked (unsweetened) coconut

1 1/2 c chopped nuts 
We like cashews, almonds and pecans

1/4-1/3 c chia seed

pinch of  sea salt

1 c raisins (optional, add after baking)

1/2 c coconut oil

1/2 c honey

Ok, this is so easy it's ridiculous. Although you do need to make it ahead - not the kind of thing to try and mix up when time is short. 

Preheat oven to 275.  In a large bowl mix together all dry ingredients, except raisins. 
Mix melted and cooled coconut oil and honey.  Pour over coconut/nut/chia mixture and mix well.  This takes about 3 minutes, total.  Put on a parchment lined baking sheet and bake for 12-15 minutes, depending on how toasted you like your coconut.  Add raisins while it's warm.  

I keep the finished product in the fridge and the baintrain does snack on it, if I remind them it's there.  I really love it after supper, but my favorite thing about it? Knowing we can survive one of those mornings without turning on the stove or eating anything from a box!
