This post is just about regular life. Making something you hope will be palatable and healthy, and ending up doubled over laughing because sometimes homemade just isn't pretty. In fact this one was so hideously unappetizing, I asked the baintrain to close their eyes to taste it.
A new friend promised me it was the best whole food, grain free sandwich bread she'd ever made. Of course I had to try it. So in the middle cleaning out the kitchen cabinets yesterday, I whipped it together.
As promised, it was easy. I whisked together sunflower seed butter, eggs and water to almond flour, arrowroot powder, baking soda and salt. I double checked the recipe and almost forgot to add chia seed meal - so stirred them in at the last minute. I popped it in the oven, finished my cabinet cleaning and 35 minutes later opened the oven door to find something wholly other than what I thought I was baking.
It really does taste good - but best to eat with your eyes closed.
Homemade might not always be pretty, but it surely can make interesting lunches.
