Though this recipe is protein free, there are plenty of sustaining calories from the cream. It will whip together so fast they'll hardly have time to ask when it's will be ready.
Berry Fool
6 servings
2 cups Heavy whipping cream
2 T xylitol or coconut sugar
10 drops vanilla creme stevia
1 t vanilla
2 c berries
mint leaves for garnish - optional
Whip cream til frothy ( about a minute) then add sweetner and vanilla.
Gently fold in rinsed berries and garnish with mint leaves.
We like blackberry fool the best - the tartness of the blackberries balances the sweet cream nicely. And for the record - not a single one of them ate the mint leaves, though they did lick the cream off off them...
Prepare to hear this comment float around the table as they gobble it down, "This is the best thing you've ever made!"
