Wake up and smell the Chocolate

Wake up and smell these flourless, chocolate banana muffins.  You will not regret using the brown bananas taking up space on your counter for this recipe instead of banana bread.
::Flourless Chocolate breakfast muffins::
{makes 5 dozen mini muffins}
6 fresh eggs
1/2 t sea salt
3/4-1 c. honey or agave nectar (you know I'm always cutting back on sweetners)
1/2 c. melted coconut oil
4-5 mashed bananas  (about 2 cups)
1 c. cocoa

This is a one bowl recipe.  Mash bananas and add eggs.  Mix well and add salt, honey/agave, cocoa and oil.  All of that mixing will take you less than 10 minutes. Guaranteed.  Fill lined muffin cups 2/3rd way full and bake at 350 about 15 minutes. 

Your house will smell like brownies and you'll be off to quite a good start.

Coconut oil? I might have to do some searching for that in the German supermarket. Could one substitute something like canola instead? Does it give it a coconut flavor?I I'm not a huge coconut fan :) Otherwise these sound really interesting and have to be healthier than my banana chocolate mocha muffins...which taste heavenly but are full of butter :)

Chocolate at breakfast? Count me in! They sound delicious. Incidentally, my 4-year-old son was just telling me the other day that he likes chocolate for breakfast. Looks like we'll be having these soon!

Good grief! I think I have just died and gone to heaven. I have always made my banana muffins with a little bit of chocolate chips. I think I'll be switching over to a lot of chocolate with a little bit of banana. Bookmarked it, waiting for bananas to get brown!
