Smooth-ie, -er Monday Morning

After a weekend out of town, I had a feeling.  Just a hunch that this morning was going to be rushed hard challenging.  Every Monday isn't hectic, but travel and the time change had stretched us pretty thin. After working through the laundry and fielding baseball phone calls, I considered my options.  Mainbain and I had been talking about an NPR interview (of course!) he'd heard about rice, so I thought I'd do a variation of the Crockpot Lady's breakfast rice pudding.  I'm all about variations.  (I recently learned the hard way that my variations don't work when I ended up with charcoal instead of muffins!)  I'm constantly adding a bit of this or taking away a particular ingredient - usually the sugar.  I'm trying to improve the recipe's flavor and healthiness in one fell swoop.

So, before bedtime I turned my crockpot on low and literally threw in:

2 cups organic Brown rice
1 C. unsweetened organic coconut
1 can organic coconut milk
3 1/2 cups whole raw milk
1/2 cup xylitol (I should have used a cup)
1/4 c. Organic coconut oil
Stirred it up and went to bed.  Slept an hour later than usual because making custom-order eggs wasn't on my to-do list. Woke up, took the top off and had time for my morning routine. So thankful for time to get my day off on the right foot.  I will admit with that extra hour of sleep it had gotten a bit crispy around the edges, so I didn't feed the bains that part.  Had to add a bit of honey, but breakfast was served!

With the main part of the meal made I didn't hesitate making my smoothie a bit bigger so they could all enjoy some too:

6 c plain kefir (farm life bonus!)
1 c  frozen organic blueberries
1/2 c frozen organic mango
4 frozen cubes of Berry Boost (I buy 1 big bottle and freeze it in ice trays just for smoothies)


So. Good. So Delicious it's hard to remember you're filling up on a beverage full of live cultures and if you add hemp seeds, it's plenty of lean protein to keep you going through lunch!

And my boys drug me out of bed to help pour store-bought non-fiber/ non-organic/ nutritionally negative cereal.....AND you and I still love each other! What a wonderful world!

Okay, I need to know where you get all your coconut products. And I've fallen down on the kefir making. This has inspired me to make more, but I'll need some milk first. ;)
